Venison
Our venison is from mostly Fallow, Sika or some Red deer, roaming wild on surrounding farmland. The meat is dark red, close textured and with virtually no fat. It is very versatile and with an excellent flavour and has the added benefit of being lower in cholesterol than traditional meat. Steaks are versatile and tender and joints cook well with marinades. As a general rule 1.5kg joints off the bone and 2.5kg joint on the bone will feed 4-6 people. Out of season, Roe deer or farmed red deer is offered.
