Bison and buffalo are farmed in the UK. The former being the North American Bison that was once central to the life of the Plains Indians and the latter being Water Buffalo originating from Asia. Our meat is predominantly from young bulls, whose mothers are part of the first British Water Buffalo dairy farms. The milk is traditionally used for making the famous Italian Mozzarella di Bufala. In both cases the meat is richer than beef, having a more profound flavour. American style pot roasts and bean chillis are to be recommended.
